Formula and rules

  • A 1:16 ratio means 1 gram of coffee to 16 grams of water, and 1 g of water ≈ 1 ml
  • Water = coffee × ratio
  • Coffee = water ÷ ratio
  • Cups = water ÷ 240 ml (a US cup)
  • Espresso brews near 1:2, pour-over at 1:15–1:17 and immersion at 1:15

Worked examples

18 g at 1:16

Input Coffee 18 g, ratio 1:16.

Result 288 ml of water, or about 1.2 cups.

500 ml at 1:15

Input Water 500 ml, ratio 1:15.

Result 33.3 g of coffee, enough for two large mugs.

30 g at 1:17

Input Coffee 30 g, ratio 1:17.

Result 510 ml of water, or about 2.1 cups.

FAQ

Should I measure water in grams or millilitres?

Either. One millilitre of water weighs one gram, so a scale reading 288 g is the same as 288 ml. Brewing scales that show both are the easiest option.

Which ratio should a beginner start with?

Start at 1:16 for pour-over and adjust after tasting. Go to 1:15 if it tastes weak, 1:17 if it tastes too strong or bitter at the end of the cup.

Why does the same ratio taste different the next day?

Ratio only fixes the strength. Grind size, water temperature, agitation, the filter and the age of the beans all change extraction, so keep the ratio and change one variable at a time.
